Finca Callejón Seco: Our Coffee Farm in Panama

The word finca comes from Spanish and most often refers to a traditional rural estate, farm, or agricultural property with its own land. For us, however, this word means much more. It is a synonym for a coffee paradise hidden in the rainforest — a place full of history and untamed wild nature.

Pack your imaginary backpacks, because together we are setting off to our finca, Callejón Seco, in Panama — a place that gives life to some of the most colourful coffee beans.

A Story Written by Generations

Our finca stretches across more than 50 hectares in the renowned Panamanian region of Boquete. Its story began more than 100 years ago, when Germán Taylor’s family planted the first coffee trees here. In doing so, they became part of the coffee history of the entire Chiriquí region, where organised coffee cultivation had been developing since the end of the 19th century.

Callejón Seco is a place where respect for the land, the craft of coffee, and patience is passed down from generation to generation.

Alchemy Beneath Volcán Barú

What makes our finca so exceptional? The answer lies in the soil and in the clouds. The plantation sits at an impressive altitude of 1,300 to 1,600 metres above sea level, directly beneath the slopes of Volcán Barú — the highest point in all of Panama.

This location creates a truly unique mountain terroir. Regular rainfall alternates with a cooler climate and, above all, a magical natural phenomenon: the frequent mountain mist known by locals as bajareque.

The mist wraps the coffee trees in a cool veil, causing the coffee cherries to ripen much more slowly than they would in the lowlands. The result? Sugars and fruit acids have plenty of time to develop within the cherries. This is exactly why coffee from Callejón Seco has such remarkable clarity, elegance, and flavour complexity.

Typica, Red Bourbon and the Rare Geisha

On our finca, we grow some of the most noble coffee varieties with great care — from the traditional and beautifully balanced Typica and Caturra, through creamy, juicy Red Bourbon, all the way to the absolute queen of coffee: Geisha.

But the journey does not end with the harvest. One of the great advantages of Finca Callejón Seco is its modern technological facilities for coffee fermentation and processing. Here, we can experiment with a wide range of natural processes, macerations, and infusions.
