The dry method (natural) is one of the oldest ways of processing coffee. After harvesting, the coffee cherries are not stripped of their skin or pulp, but are dried whole. They are spread out on concrete patios or raised African beds, where they are regularly turned several times a day for several weeks and checked to ensure they dry evenly and do not start to ferment or rot undesirably. Only after drying are the dried skin, pulp, and other layers mechanically removed from the beans in a dry mill.

Coffee beans processed by the dry method tend to have a fuller body, more pronounced sweetness, and a more intense fruity character. Their flavor profile often reveals notes of ripe fruit, caramel, or nuts.
